I made double these quantities.<\/p>\n<p><strong>Cake<\/strong><\/p>\n<p>500g plain flour<br \/>\n500g caster sugar<br \/>\n1 teaspoon bicarbonate of soda<br \/>\n1 tablespoon baking powder<br \/>\n1\/2 teaspoon salt<br \/>\n150g cocoa powder<br \/>\nHalf a 284 fl oz pot of Elmlea single cream<br \/>\n150ml olive oil<br \/>\n4 large eggs<br \/>\n1 teaspoon vanilla extract<br \/>\n7 fl oz freshly squeezed orange juice plus the grated rind of 1 orange<\/p>\n<p>Line a 250mm x 310mm (10&#8243; x 12&#8243;) tin with greaseproof paper and lightly grease and flour it.<br \/>\nPreheat oven to 180 degrees (160 for fan oven), gas mark 4.<br \/>\nMix all dry ingredients.  Add the remaining ingredients and whisk using a mixer for 3 minutes.<\/p>\n<p>Cook for 40 minutes.  Test with a skewer &#8211; if still sticky, give it another 5-10 minutes.<br \/>\nLeave for 20 minutes then turn out onto a wire rack to cool.<\/p>\n<p><strong>Butter cream for the middle<\/strong><\/p>\n<p>100g unsalted butter<br \/>\n200g icing sugar<br \/>\n1 desert spoon cocoa<br \/>\nA drop of vanilla essence<br \/>\nTablespoon of freshly squeezed orange juice<\/p>\n<p>Mix together with whisk.<\/p>\n<p><strong>Glaze for the top<\/strong><\/p>\n<p>100g good dark chocolate broken into pieces<br \/>\n40g unsalted butter cut into cubes<br \/>\n3 tablespoons freshly squeezed orange juice<br \/>\n75g icing sugar<\/p>\n<p>Melt chocolate in a bowl over hot water. Stir in the sieved icing sugar.<br \/>\nAdd butter and stir until fully incorporated (and don&#8217;t panic!).<br \/>\nRemove bowl from heat and add juice one tablespoon at a time.<\/p>\n<p>Leave to cool for about an hour.
